A surprising taste experience which allowed us to discover the interactions after six months of aging between a white wine reduced to a TAV of 50% and bicentennial oak available at different toasting levels. Surprising to see how oak will structure a spirit by giving it a very different aromatic and olfactory elegance depending on the toasting and type of wood.
